Distilleria Segnana
It was 1860 when Paolo Segnana, from Borgo Valsugana, created one of the few mobile distilleries in history. He installed the stills on a horse-drawn cart and began to travel from valley to valley, from farm to farm, working the freshly pressed pomace.
The grappa had to be distilled within twenty-four hours of pressing the grapes, as required by the iron law of the Austro-Hungarian Empire. In 1982, Segnana was taken over by the Lunelli family, producers of Ferrari sparkling wines.
A natural transition, given that the Lunellis were among the most important suppliers of pomace. Segnana grappa is made partly from pomace obtained from the soft pressing of the grapes used to create Ferrari, rich in must and aromas.
The brevity of the path that separates the pressing of the grapes from the stills allows the pomace to lose none of its original fragrance, the fullness of the aromas, the intensity of the flavors.
