The Refosco dal Peduncolo Rosso from La Roncaia is crafted with meticulous attention to detail, showcasing a refined winemaking process. The grapes are harvested late, and part of the production undergoes expert drying for about 8 weeks. The vinification takes place in stainless steel tanks, with maceration lasting 25 to 30 days at controlled temperatures. The grapes, previously destemmed but not crushed, are carefully managed to extract optimal flavors.
The wine is then aged in new and second-use barriques, with rackings every 90–100 days. Over 36 months, the Refosco matures slowly in wood, developing complexity. After forming the final cuvée, the wine is bottled and left to refine further in a horizontal position for 6 to 10 months.
