It comes from vineyards located in the hilly areas of Pressano di Lavis, partly grown with the simple Trentino pergola and partly with gouyot, in clayey loam soils. After maceration of the crushed grapes for about 12 days at a controlled temperature and with frequent pumping over, it is racked and transferred to steel tanks and then refined in large oak barrels and barriques.
Pinot Noir has a small, cylindrical bunch, often winged and compact; a medium-sized blue-black grape with juicy and sweet pulp. It has a medium-sized leaf, rounded and mostly trilobed.
Sensory characteristics
More or less intense ruby red color, however warm and brilliant. Intense, pleasant and characteristic aroma with hints of undergrowth, fruity with aromas reminiscent of blackcurrant and cherry. Dry flavor on an elegant bitterish background, savoury and soft.
Food pairings
It pairs perfectly with vegetable soups, pasta and beans, polenta and sauce, baked shank, mixed grilled meats and is enhanced with mixed boiled meats.
Serve at 18° C. Uncork the bottle one hour before serving.
