Nascetta di Novello is one of the most authentic white wines of the Langhe. A native grape variety of the municipality of Novello, it risked extinction in the last century, surviving in a few rows until its rediscovery in the 1990s. Today, it represents a symbol of local identity and pride. It grows on marly and calcareous soils that enhance its freshness and minerality. In winemaking, it can express itself purely in stainless steel, enhancing its verticality and aromatic fragrance, or evolve with brief aging on the lees, amplifying its structure and complexity.
Sensory Characteristics
Color: Bright straw yellow, with golden highlights that intensify with aging.
Nose: The nose presents aromas of white flowers (hawthorn, acacia), citrus (lime, grapefruit), white-fleshed fruit (pear, peach), and herbaceous and balsamic notes. Hints of honey and hydrocarbons develop with aging (somewhat reminiscent of Riesling).
Taste: Good structure and volume, crisp acidity, and a pronounced savory flavor. A long finish with citrus and mineral notes.
This white wine surprises with its ability to mature: it can mature for 5–10 years, developing complexity and depth.
Food Pairings
Thanks to its freshness and structure, it is highly versatile. Perfect with Piedmontese appetizers (veal with tuna sauce, raw meat), tajarin pasta with butter or delicate sauces, herb or asparagus risottos, and medium-aged cheeses.
