After fermentation, Cercatoja matures for about 18 months in French oak barriques, followed by a period of bottle aging, which gives it harmony and softness. The result is an intense and structured wine, capable of evolving over time, maintaining a perfect balance between power and finesse.
Tasting Notes
Color: deep ruby red with garnet reflections.
Aroma: complex and elegant on the nose, with intense notes of ripe berries, cherries in alcohol, nuances of sweet spices, cocoa and tobacco, enriched by a light balsamic hint.
Taste: Structured and enveloping, with velvety tannins and a pleasant acidity that gives balance and freshness. The finish is long and persistent, with spicy and fruity notes that pleasantly return to the palate.

Perfect with grilled red meats, game, braised and roasted meats. Also excellent with aged cheeses and structured dishes of the Tuscan tradition.
