STEIN Sauvignon comes from vineyards located in Nalles, between 330 and 400 meters above sea level, on deep alluvial soils formed by deposits from local streams. The climate is characterized by warm days and cool nights, ideal conditions for preserving the varietal's characteristic aromas and freshness. The grapes are harvested by hand and vinified in stainless steel; fermentation lasts approximately three weeks, and the wine then ages on the lees for approximately five months, a process that contributes to increasing complexity and structure while maintaining a taut and fragrant style. The result is a precise and dynamic Sauvignon, combining varietal aromas, minerality, and a crisp freshness typical of the finest Alto Adige whites.
Sensory Profile
Color: Bright straw yellow with greenish highlights.
Aroma: Intense and varietal, with hints of citrus (grapefruit, chinotto), elderflower, aromatic herbs, exotic hints of lychee, and light vegetal notes.
Taste: Fresh and crisp, with good structure, lively acidity, and a pronounced savory flavor. The finish is long and aromatic, with citrus and herbaceous aftertaste.
