Sensory Characteristics
Color: Bright ruby red, occasionally with purple highlights.
Nose: The nose reveals an unmistakable and seductive bouquet: white and pink peppercorns take center stage, followed by wild strawberries, raspberries, and red currants, with floral hints of rose and violet. The spicy component is its distinctive aromatic signature.
Taste: On the palate, it is lean and agile, medium-light in body, yet full of personality. The freshness is lively, the tannins are subtle and well-integrated. The finish is persistent, with spicy and fruity aftertaste that invites you to try again.
Food Pairings
Ideal with Piedmontese cured meats, veal with tuna sauce, tajarin with light ragù, agnolotti del plin, white meats, rabbit, and medium-aged cheeses. It's also interesting served slightly chilled during the warmer months.
