First Gaierhof sparkling wine, it is produced with only Chardonnay grapes, manually harvested from high hill vineyards in Sorni, Pressano di Lavis and in Alta Val di Cembra. The climate and the strong temperature variations favor a perfect maturation of the Chardonnay, maintaining a marked acidity and the fragrance of the grapes. The soft pressing of the whole grapes is followed by the cold static decantation of the musts, which are fermented in steel at 16 degrees, with selected yeasts, for a duration of about 10 days. The refinement phase on yeast continues until the following spring, then the sparkling base is prepared for bottling and selected yeasts are added again for the second fermentation, according to the traditional classic method, in compliance with the Trento Doc specification. Siris matures on the yeasts for 36 months, thus acquiring structure, elegance and complexity.
Sensory characteristics
Siris has a bright yellow color with greenish reflections. Intense, fresh aroma with fruity notes of Golden apple and wild flowers with an elegant and delicate note of yeast and dried fruit. Fresh, fragrant, dry, harmonious and velvety flavor. Extremely fine and persistent perlage.

Ideal as an aperitif and to accompany moments of celebration; excellent as a wine throughout the meal on fish and shellfish-based cuisine.
