The harvest takes place in the first ten days of October where the grapes undergo a natural drying process in the vineyard. The harvest and subsequent destemming are done manually, followed by cold maceration and thermoregulated fermentation. Fermentation stops naturally when 13.5% vol. is reached, resulting in a residual sugar content of approximately 100 g/l.

Campo del Drago 2018 is a Brunello di Montalcino Cru that comes from the highest and most precious plot of the Capanna vineyard: one and a half hectares located at 430 meters above sea level. At this height the vines also enjoy the best exposure. The significant presence of marl in the soil makes the wine extremely complex and long-lived, with well-present and refined tannins.
