This Champagne reflects the pursuit of harmony between finesse and intensity, resulting from the perfectly balanced blend of Chardonnay (50%) and Pinot Noir (50%). The vineyards located on limestone-clay slopes are the foundation for this wonderful Champagne, which ages on the lees for eight years before disgorgement.
Sensory Characteristics
Color: Golden yellow with a very fine perlage
Aroma: An elegant and complex bouquet. It opens with notes of ripe citrus, green apple, and white flowers, followed by nuances of bread crust, toasted hazelnut, and a light chalky mineral note. Clear harmony between the fruity Chardonnay and the structure of the Pinot Noir.
Taste: Balanced, creamy, and vibrant on the palate. The attack is fresh and taut, with a lovely acidity that supports the structure. The fruity notes (apple, pear, white peach) evolve into more balsamic and toasted sensations, with a clean, mineral, and persistent finish.
Food Pairings
It pairs best with raw fish and salmon tartare, oysters, and seafood. It's also excellent with champagne risotto, fine poultry, veal in a light sauce, and moderately mature cheeses.
